Turkey, Cheese, and Vegetable Omelet

Ingredients

  • 3 large eggs
  • ½ cup turkey breast tenderloin, chopped
  • ½ cup spinach
  • ¼ cup low fat shredded cheese
  • ¼ cup green peppers, diced
  • ¼ cups onions, diced
  • ¼ cup tomatoes, diced
  • Salt and pepper to taste

Directions

Heat medium-sized skillet over medium-high heat. Cook turkey in skillet until an internal temperature of 165°F is reached. Cooking times may vary depending on product. Remove from skillet and set aside. Add spinach, green peppers and onions to skillet and let cook for 3-5 minutes or until onions brown and become translucent. Remove from skillet and set aside. Whisk 3 eggs in a medium size bowl. Add salt and pepper to taste. Pour eggs into skillet and let cook for 2-3 minutes or until able to flip. Once flipped, add turkey, cooked vegetables, cheese, and tomatoes on one half of the omelet. Flip other side of omelet on top of the fillings. Carefully remove from skillet onto a plate and enjoy!
