Slow Cooker Meal: Taco Tuesday!
Ingredients:
- 2 pounds boneless skinless chicken breast
- 12 whole wheat 6-8 inch tortillas
- 1 tablespoon olive oil
- ½ cup lime juice
- 2 teaspoons chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon cumin
Optional ingredients for toppings:
- Lettuce
- Tomatoes
- Low fat shredded cheddar cheese
- Avocados
- Cilantro
- Black beans
Directions:
- Season chicken with olive oil, salt and pepper and rub to evenly coat chicken.
- Add all the ingredients to the slow cooker and cook on high for 2-4 hours or low for 6-7
hours until able to shred chicken.
- Remove chicken from slow cooker and place on a cutting board for 5-10 minutes until
slightly cooled enough to shred.
- Put shredded chicken back into the slow cooker and allow to cook for another 20-30
minutes.
- While that’s cooking, get your toppings ready for quick assembly when chicken is done.
Chop lettuce, tomatoes, avocados, and fresh cilantro.
- Place 2-3 small spoonfuls of chicken into a whole wheat tortilla, add desired toppings
and enjoy!
