Slow Cooker Meal: Asian Lettuce Wraps

Ingredients:

  • 2 lbs ground chicken
  • 1 ½ tsp minced garlic
  • 1 red bell pepper, diced
  • ½ cup red onion
  • ½ cup soy sauce
  • 1 8 oz can sliced water chestnuts, drained and rinsed
  • ½ cup peanuts, chopped
  • ½ cup sliced green onions
  • 1 head iceberg lettuce
  • Salt and pepper to taste

Directions:

  • Place ground chicken, bell pepper, garlic, onion, peanuts, soy sauce, salt and pepper into at least a 5 quart slow cooker and mix. Cook on low for 6-7 hours.
  • Stir in water chestnuts and green onions and cook for another 3-5 minutes.
  • Separate, wash and dry iceberg lettuce leaves, top with mixture and enjoy!
