Gennesa’s High Protein Goulash

Ingredients

  • 1 Lb Ground Turkey
  • 1 Zucchini, sliced
  • 1 Sweet Onion, chopped
  • 1 Can Rotel (or 8oz-10oz salsa)
  • 1 Can Black Beans, rinsed
  • 4 Eggs, beaten
  • Salt & Pepper to taste

Directions

In a large frying pan, heat the minced garlic then add the turkey and brown together. When the turkey is no longer pink, add the zucchini, onion, Rotel, beans, mushrooms, salt and pepper. Cook on medium heat, covered, stirring every few minutes until veggies are soft. Once the turkey is browned and veggies are soft, add in your eggs and stir the meal until eggs are fully cooked in-the mixture. This is enough to feed the family with leftovers for lunch! Top it off with some more fresh salsa or melted cheese for a little flair! My non-dieting family members like when I serve this over brown rice for them!
