Mustard Baked Cod
Ingredients
- 1 lb cod fillets
- 2 Tbsp Dijon mustard
- 1 Tbsp low fat mayonnaise
- 1 tbsp olive oil
- 1 tsp dried rosemary
- Salt and pepper to taste
Directions
- Heat oven to 375°F
- In a small bowl, mix together the mustard, mayonnaise, rosemary, salt and pepper.
- Lightly coat a sheet pan with the olive oil and place the fish on the pan. Lightly spread the mustard mixture onto the fish.
- Bake for 15 minutes or until an internal temperature of 145°F is reached.
- Pair with your favorite cooked vegetable such as asparagus or zucchini and enjoy!
