Homestyle Turkey Meatloaf and Mashed Potatoes

Ingredients (for meatloaf)

1 lb lean ground turkey
2 tbsp onion, minced
2 garlic cloves, minced
1/2 cup seasoned breadcrumbs
1/4 cup ketchup
2 Tbsp Worcestershire sauce
1 egg
1 tsp salt

Ingredients (for mashed potatoes)

1 lb (about 2 medium) Yukon gold potatoes, peeled and cubed
2 large garlic cloves, peeled and halved
2 tbsp fat free sour cream
2 tbsp low sodium chicken broth
1 tbsp skim milk
1/2 tbsp light margarine
2 tbsp fresh thyme
Salt and pepper to taste

Directions

Preheat the oven to 350°
In a large bowl, mix the turkey, onion, garlic, breadcrumbs, ketchup, egg, Worcestershire sauce and salt. Place meatloaf mixture into an 8 x 4 inch loaf pan or one of similar size. Bake for 45 minutes or until an internal temperature of 165° F is reached. Be sure to check periodically to avoid overcooking.
Put the potatoes and garlic in a large pot with salt and enough water to cover. Bring to a boil. Cover and reduce heat. Simmer for 20 minutes or until potatoes are tender. Drain and return potatoes and garlic to pan. Add remaining ingredients. Mash until smooth. Season with salt and pepper to taste.
Plate a ½ inch thick slice of meatloaf with 1/2 cup of mashed potatoes. Serve with your favorite cooked vegetable and enjoy!
