Healthy Recipe: Banana Pudding
Ingredients:
1 Extra Ripe Banana
¼ TSP Vanilla Extract
1 Cup Unsweetened Almond Milk
1 TBSP Cornstarch
¼ TSP Cinnamon
Directions:
In a blender or food processor, combine bananas and vanilla extract. Add in ¾ cup almond milk and cinnamon. Puree until smooth. In a non stick pot, set heat to medium, combine cornstarch with remaining ¼ cup almond milk until dissolved. Add banana mixture and mix well. Stirring frequently, cook until mixture thickens, about 8 minutes. Let cool for about 30 minutes, cover and refrigerate for 2 hours or until thickened.
