Cheddar Crusted Baked Chicken

Ingredients

  • 3 boneless, skinless chicken breasts, cut in half
  • ½ cup all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 egg
  • 1 Tbsp skim milk
  • 1 cup low fat shredded cheddar cheese
  • ½ cup Italian seasoned bread crumbs
  • 1 cup rice crispy cereal

Directions

Preheat oven to 350° and grease a medium baking dish with non-stick cooking spray. In a small mixing bowl, mix the flour, salt, pepper, and garlic powder. In another bowl, beat the egg and milk together. In a third bowl, mix the cheese, bread crumbs, and cereal. One at a time, coat the chicken with the flour mixture, then dip into the egg mixture, then coat with the breadcrumb mixture. After each one is finished, place chicken in the prepared baking dish. Bake chicken for 35 minutes or until coating is golden brown.
