Simple High Protein Chicken and Tuna Salad Lunch Ideas

Cottage Cheese Tuna salad

Ingredients

  • 3 5 oz cans albacore tuna, drained well
  • 1 cup cottage cheese
  • 1/4 cup finely chopped red onion
  • 2 celery stalk finely chopped
  • 2 Tablespoons capers chopped
  • 1/4 cup diced dill pickles
  • Juice from 1/2 lemon about 1 TB
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon garlic powder
  • Whole wheat crackers, raw vegetables or low fat cheese slices for serving

Instructions

  1. Mix all ingredients together (except crackers, veggies or cheese)
  2. Cover and refrigerate for at least 30 mins
  3. Serve on your favorite whole wheat crackers, raw veggies or low fat cheese slices

High Protein Sweet Pea Tuna salad

Ingredients

  • ¼ cup plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon dried dill weed
  • 5 ounces albacore tuna in water drained
  • 1 cup fresh frozen peas thawed
  • ¼ cup red onion diced
  • ¼ cup red bell pepper diced

Instructions

  1. In a bowl, add Greek yogurt, Dijon mustard, salt, pepper, garlic powder, and dill weed. Stir to combine.
  2. Add tuna, peas, red onion, and bell pepper. Toss to coat.
  3. Serve chilled over mixed greens as a salad, in a wrap, with crackers as an appetizer, or alone.

Tzatziki Chicken Salad

Ingredients

  • 1 cooked rotisserie chicken
  • ½ red onion diced
  • 1 medium cucumber grated
  • ¾ cup plain Greek yogurt (you can substitute the plain Greek yogurt for Tzatziki Greek yogurt dip if desired)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Remove the meat from your rotisserie chicken and shred into bite size pieces. Add to a large bowl along with red onion. Set aside.
  2. Squeeze the excess moisture from your grated cucumber, then add to a bowl along with Greek yogurt, dill, lemon juice, garlic, salt, and pepper. Stir to combine. Pour sauce over chicken and onions, then toss until coated.
  3. Refrigerate until ready to serve.
