High Protein Muffins
Ingredients:
¼ cup whey protein powder (any flavor will do)
¼ teaspoon baking powder
1 large egg
½ cup mashed banana, very ripe
1 tablespoon milk
Directions:
Spray inside of a large, microwave-safe mug with nonstick cooking spray. Add all ingredients to the mug and stir with a fork until well blended. Microwave on high for 1 to 2 minutes, or until center is just set. Let cool before enjoying. Eat directly from the mug or gently remove onto a small plate.
